Philippians 4:6-7 (KJV)1 Thessalonians 5:18 says in every thing, not for every thing — the difference matters. It isn't asking you to be grateful for hard things as if they were good. It's asking you to bring gratitude into every thing, the same way you bring God into every thing. Gratitude in hard times isn't denial. It's choosing not to let the hard thing become the only thing you can see.
